Introduction

INTRO TO A NEW NOODLE:

What are Shiritaki noodles? They are actually about 97% water and 3% glucomannan fiber from varied plant-based foods like yams (depending on the brand.) They’re a super low-calorie “mock pasta” with no digestible carbohydrates. Some refer to it as a “miracle” noodle replacement with literally near 0 calories and a neutral flavor profile.

ADD A LEAN PROTEIN ON TOP FOR A COMPLETE MEAL: grilled or smoked salmon, white fish, or chicken

FOR THE BOWL:

  • 2 packages of Shirataki noodles; rinsed according to the package

  • QUICK TIP/GROCERY TIP: this is a form that is pre-flavored so you could even forgo a sauce! Even faster in the kitchen!

  • 3 TB radish or watermelon radish, cut into matchsticks

  • 1/2 C orange + yellow carrot, cut into matchsticks

  • 1/4 C avocado, diced

  • 2 handfuls of mung bean sprouts

  • 1/2 C edamame, shelled

  • 1/8 C roasted nori seaweed, krinkled

  • 2 TB scallions, chopped

  • 1/2 C cucumber, sliced + quartered

  • 2 TB black sesame seeds
